It should be easy to see in the Civi UI when someone has opted out or changed their email preferences via the Unsubscribe or Email Preferences forms.

The queue consumers currently just update the fields. Make them create Civi Activities as well. There's already an 'Unsubscribe' activity type.

Once we have tracking custom fields, they should also set medium / source / campaign as given in the URL parameters.
