Update ElasticSearch documentation to reflect current operations cluster and index building

Speaking with @dcausse and reviewing https://wikitech.wikimedia.org/wiki/Search our operational layout documentation [1] is out of date. Let's update it to reflect how our systems are currently organized as ganglia shows me we have far more machines then when this was written.

I'd also like to see a quick run down of how we build indices

This will not only be good for the team but also for new engineers that join the team.

Erik says this is mostly done. Should be finished in the next few days.

This is done, i've thrown it in needs review but i'm not sure who will be doing that review.

Everyone who works on this also wrote the documentation, so it was reviewed while it was being written! I figure we can just call this done.

Very happy with the updates. I've been the updated docs actively. Let's resolve.
