Yes, that's intentional. Multilingual Wikisource (www.wikisource.org) is the central Wikisource wiki, and hosts a number of texts in its own right - that's why the interwiki link points there. If you want to link to a page on English Wikisource, use [[wikisource:en:Page Title]].

I should note that if you want [[wikisource:]] to point to English Wikisource on your own wiki, you can customize the contents of the interwiki table in the database. Not sure if we document this very well, and in any case, the interwiki table as it now exists is probably going to go away in an upcoming MediaWiki release.

Thank you for the info. I thought it was a bug because all of the other interwikilinks from English MediaWiki go by default (without a language tag) to the English subdomain for the language-subdomained Wikimedia projects.

For meta, use [[metawikimedia:]] or on old versions of MediaWiki, [[metawikipedia:]].
AFAIK wikidata hasn't been added to the default interwiki map yet. You can use [[wikipedia:wikidata:Q42]] or similar.
To see the entire interwiki map, install Extension:Interwiki on your site, then visit Special:Interwiki. It should already be present in your installation; all you need to do is install it (see https://www.mediawiki.org/wiki/Extension:Interwiki for instructions).

By the way, the reasons why "meta:" is not an interwiki prefix are (1) people might want to use "Meta:" as a namespace name; and (2) there are two eligible sites, Wikimedia Meta-Wiki, and Sunir Shah's Metawiki Search.
