Remove category entry from config in mobile skin

Description

Categories are defer loaded in mobile and can constitute a large amount of then HTML payload.
wgCategories should not be added to mw.config in mobile skin

The MakeGlobalVariablesScript can be used to remove these items from the config but only for users of the mobile skin.
