Matt pointed out that the https://www.mediawiki.org/wiki/Phabricator/Project_management#Organizing_your_projects section of the docs was written before sub-project support was added. It needs to be updated to reflect the new reality.

I went through the section, including the Kanban and Sprint sub-sections, and hopefully brought everything up to date. It no longer talks about Sprint Extension stuff as if it was active, and mentions sub-projects where relevant.
There is clearly room for improvement, but I think it's "good enough" for now.

- In the Kanban section: "You can limit tasks in each column in workboard view > Edit column > Point Limit" with the recent changes what you can limit is the points, no longer the number of tasks in the column
