Wikitext is generally not a very good format for representing data and can only be used in a narrow set of applications. In T147591 I also saw that no one seems to even use the wikitext output of that API module.

I suggest changing the default to SnakFormatter::FORMAT_HTML which is widely used and understood (thus probably way more useful outside of the Wikimedia context).
