The Education Program extension pre-dates Content Handler, doesn't mesh well with the rest of MediaWiki, and has a number of bugs. Meanwhile, the Education Dashboard run by WikiEdu is much superior (and actively maintained).
In the long run, it may be worth looking into changing the Course pages into Collaboration Hubs and de-activating the Education Program extension.

@Harej: The idea you're suggesting is to use Collaboration Hubs as archives of the data from EP extension course pages, while using Programs & Events Dashboard as the alternative for people still actively using the EP extension?
The things to preserve would include:
How would this fit into a Collaboration Hub? (I think it would be acceptable to just use wikitext for things that don't have a better option.)
