This is again probably falling out of the scope of the wikibase-containers project and perhaps should be retagged with mediawiki-containers?

Afaik there is already some parsoid image that can be used?

The wikibase-docker git repository will be going away
Also in newer versions of MediaWiki parsoid is part of mediawiki itself, so no extra container needed!
