Update README files with latest configuration instructions

Description

Let's ensure that the README files are up to date when it comes to installation and configuration of the various structured-data-related Extensions after our big release.

Some things that come to mind to review/update:

  • MediaInfo: is everything current here RE: configuration? Could someone get this working on a local wiki instance using nothing more than this README file?
  • UploadWizard: Loooks like there are now 3 config variables that need to be set to get the "data" tab working.
  • Anything else?
