I got it up and running at https://ocr.wmcloud.org/ though Tesseract seems to run very slow compared to staging. I think I might have done something wrong.

Another observation: both staging and production aren't writing to var/log/prod.log as we normally see.

Up and running at https://ocr.wmcloud.org/ and Sam's PR fixed the issue with Tesseract

I tested a few images on https://ocr.wmcloud.org/ with Google and Tesseract. I didn't see any problems. It seemed pretty quick to me, but I don't have much for comparison.
