Practise running a complete backup recovery from first staging and then production.

N.B. we will need to schedule and communicate to users a window for this drill (probably one work day) since it will be necessary to set the DBs read only to prevent any data loss.

Notes should be taken throughout the drill to keep track of all the steps necessary and any hiccups / oversight.
