Two ideas for solving this:

Idea 1
When organizers are enabling registration on an event page they can indicate that they would also be participating. After event creation, on the participant list, organizers have a call to action to add their own PII.

Idea 2
Organizers have a secondary action below Manage event for registering for the event they are organizing.

Both ideas can be implemented together.

The wireframes sound good to me!

Looks good overall, I think the second proposal might be easier to implement, and it would also mean that organizers and non-organizer have almost the same flow for registering. With the first option, I'm a bit worried about adding more things to the registration form (which is already quite long), and the CTA in the table (what if organizer doesn't want to add info, potential issues with a11y and pagination, etc.).
