Description

Once all outstanding work is complete, a new version should be tagged and released.

Confirm that everything is done and correct on https://ocr-test.wmcloud.org
Create a new release (e.g. via the GitHub UI)
Wait for CD to deploy to prod
Set up Transkribus API config on prod (i.e. run ./bin/console app:transkribus etc.)
Confirm that everything is working on https://ocr.wmcloud.org (web UI and API)
