Description

This task should contain all the improvements related to getting Lift Wing out of MVP state.

List of high level subjects to work on:

Metrics - add a logstash dashboard to inspect the traffic produced by model servers, set SLI/SLO and create a dashboard.
Documentation - write wiki pages to inform our users about what they need to do to use Lift Wing effectively.
Kserve improvements - add the explainer functionality to model servers.
Model server improvements - revert-risk model promotion to production.
