Use new wikitext source in the KG pipeline

Description

To the crease the time until KG gap metrics are available, the source of wikitext needs to change to the new wikitext source (T358366).
Here are the running time for all metrics.

Switching the data source is a non-trivial amount of work, so let's first confirm that KG data is going to be used as a stable component of Core Metrics in the coming future. @Miriam will double check this with MI in the coming weeks.
