Add a Migration to the CommunityConfiguration example (and tests)

Description

While we document how to do a migration, it might be easier to learn from an "official" example for how to do it. Also, we should add e2e-tests that are exercising that migration, both for upgrading and downgrading.

Acceptance Criteria:

  • The CommunityConfiguration example contains a non-trivial migration
  • The CommunityConfiguration example contains tests for that migration, both for upgrading and downgrading
NOTE: this is currently blocked on T371028: Migration Schemas to a non-latest version is broken
