Description

We've got a cloud instance that proxies our test URLs to our dev computers and serves up our Apple Pay certs. It needs to be upgraded to Debian trixie at some point

I just created a 'payments-trixie' image in horizon, but we still need to

copy over the nginx configuration and apple pay certs from the old one
point the web proxies to the new server
update proxy-forward script with new instance name

OK, this is done - we just need to update docs to mention payments-trixie.fr-tech-dev instead of payments.fr-tech-dev
