Experiment overrides were enabled everywhere as part of T402369: Send analytics events for overridden experiments to the console, which made the $wgMetricsPlatformEnableExperimentOverrides config variable redundant. This task covers removing it and updating any documentation that references it.

The usage of this variable has been already removed from MetricsPlatform extension as part of T407188: TypeError: MediaWiki\Extension\MetricsPlatform\XLab\Enrollment\EnrollmentResultBuilder::addAssignment(): Argument #2 ($groupName) must be of type string, null given, called in /srv/mediawiki/php-1.45.0-wmf.22/extensions/Metrics via https://gerrit.wikimedia.org/r/c/mediawiki/extensions/MetricsPlatform/+/1196041/
The variable is still living in mediawiki-config but there is no trace of it in the project documentation (we already removed it from the configuration recipe we have in the local development setup section)
