Refactor our OpenSearch chart for upstream version 2.8.0

Description

Per parent ticket, creating this ticket to:

  • Refactor our current charts (opensearch-cluster, opensearch-operator, opensearch-operator-crds) to work with upstream version 2.8.0
  • Verify operation. This will include testing the changes to the chart's watchNamespaces feature developed by @brouberol (ref T404874) and not yet merged upstream.

We don't need to go to 2.8.0 to support vector search, we will concentrate our energies on testing the chart version 3.x instead, ref T414217 ☂️Test OpenSearch k8s Operator 3.x ☂️. Closing...
