Search endpoints have been officially out since July 2025 and are being used regularly and we'd like to now consider them stable and move them to v1 with the rest of the endpoints

AC:

• All 4 search endpoints are moved to v1
• v0 endpoints will be deprecated only 3 months after
• OpenAPI document should only list the v1 endpoints
• Grafana dashboard will be adjusted to show both v0 and v1 routes for search until the former is deprecated

Note:

• There will be communication to the community after this ticket is implemented since we're going to have both versions available for a while
• the ticket where we previously migrated the other endpoints from v0 to v1 is T378455
