Hi, I am bureaucrat from Asturian Wikipedia and administrator from Asturian Wiktionary. Last year we voted for changing "Uiquipedia" and "Uiccionariu" to "Wikipedia" and "Wikcionariu", to preserve the original "wiki" name, and only adapting to the local language the second part of the word (-pedia, -cionariu). Votations are here: https://ast.wikipedia.org/w/index.php?title=Uiquipedia:Votaciones§ion=13#Cambiu_de_nome_de_los_proyectos_wiki_n.27asturianu (it is the votation for both names together).
Could you please change the official names to "Wikipedia" and "Wikcionariu"? Do we need to change something in our projects code (common.css, common.js, etc.)?

Should "Uiquipedia" project namespace (along with the associated talk namespace) be renamed as well?

Yes, please. This was and old ortographic/phonetic error, like when we changed the "imaxen" namespace for the correct form "imaxe" several years ago. We'll change all namespace references in the project for the new one with the aid of a bot.

It was noted that the linked discussion at astwiki is for changing the project name of both projects. Since it's not an explicit discussion, it'd be better if you start another separate discussion at astwiki for changing astwiki's configuration.
