I have been thinking this for a while now. It would be nice to collapse site lists especially for large watchlists. I have about 2000 pages on my watchlist on enwiki. And the global watchlist becomes full of enwiki results. I could exclude enwiki from my list, which I am doing now. But it would be nice to be able to temporarily collapse watchlist entries on a specific site. It would be helpful for mobile users as well as desktop users to avoid unnecessary scrolling.

Sorry for the delay. I was on a break. I would reply sooner if I got the chance. As for this task, do you want to use jquery.makeCollapsible module (mw-collapsible class)? It seems to be easier to collapse stuffs this way. Complete documentation is here.
