We need to change all of the references for the EventStream client inside the event-bridge service to the new repository, so that we can be sure that we can easily maintain the package long term.

Acceptance criteria
Our event-bridge service is now using github.com/wikimedia-enterprise/wmf-event-stream-sdk-go instead of github.com/protsack-stephan/mediawiki-eventstream-client.
