You should be able to SHOW TABLES on e.g. metawiki, then compare it to the same for metawiki_p.

Yes, that would already help a lot. I think that information should also be available from the scripts that generate the VIEWs.

There is also the difference between a 'standard' mediawiki and a WMF mediawiki database, and those differences are less obvious (which includes the text table, for example).

Nope, maintain-replicas uses what is effectively a whitelist of tables/views to create.

I'm pretty sure there either are, or used to be, differences not only between different WMF MW DBs, but between different replicas of the same WMF MW DBs.

Closing for now, there's no meaningful activity for the last few years, and there's some documented tables here https://wikitech.wikimedia.org/wiki/Help:Toolforge/Database#Unavailable_tables

Will reopen if/when that needs updating.
