First and foremost, assetic is not versioning our JS/CSS. This means whenever we deploy a release to production that relies on updates to our assets, things break because the user's local cache is not cleared.

Secondly, the assets are not minified. This makes me think we've just set up assetic incorrectly in the production environment.
