Add API integration tests to the example extension

Description

The API integration testing framework is a valuable tool for extensions that include their own API endpoints. By including an integration test in the example extension, we can increase visibility for the test framework and help extension developers write more robust APs.

To do: Update the Example Extension with a test for the example REST endpoint
