Update Elasticsearch documentation around datacenter switches

Description

The wikitech docs for Elasticsearch are outdated. Per IRC conversation with @Gehel , "now that we are running active-active, the warm up should not be needed anymore.".

Creating ticket to:

  • Update current documentation
  • Review by more-experienced SREs/SWEs
  • Notify @Clement_Goubert /Service Ops when we are confident that the documentation is correct.

The planned datacenter switchover is March 1st , so this is a time-sensitive ticket.
