Currently we're on v1.41.0 (which packages up jaeger UI v1.27.3)
Having skimmed the main CHANGELOG, none of the breaking changes look relevant to us.
Improvements / feature additions in Jaeger core that did look relevant or interesting:

The new release also bumps the version of the UI (packaged separately) to v1.40.0. There's many new features and rewrites of parts of the UI between now and then. Relevant or cool stuff:
