Description

EPUBCheck 5.0.0 was release on 2023-01-12. We should update the version on the WS Export servers, and the one used in CI.

This version may also highlight new errors in the EPUBs we produce, so any of those identified should have tasks created for them. The app:check command can be useful for finding these.

Improve CI config to make the epubcheck version number a variable: https://github.com/wikimedia/ws-export/pull/465 (merged)
Also now bump to 5.1: https://github.com/wikimedia/ws-export/pull/485 (ready for review)
The last part of this I think is to add some random book checks to CI: https://github.com/wikimedia/ws-export/pull/484 (ready for review)

All done now I think.
