On the text cp hosts there are 3 separate VarnishKafka instances with different configuration files to parse and write to different topics.
Check if they can be replaced by custom Benthos instances.

@Fabfur I'm really really hoping we can remove varnishkafka-eventlogging after we complete T353817: Create legacy EventLogging proxy HTTP intake (for MediaWikiPingback) endpoint to EventGate, as part of T238230: Decommission EventLogging backend components by migrating to MEP.
This is ready to go soon, I'm just on sabbatical until May 20. If you or someone else can help shepherd T353817 to deployment, we could probably do it sooner.
As far as I know, statsv is still in use, and could almost certainly be replaced by benthos.
