Currently Wikimedia categories are organised alphabetically by default, but it's already possible to organise pages by time of creation in the MediaWiki software, for example as was done here:

I propose that all categories on all Wikimedia websites should have a software option where pages all pages remain categorised alphabetically by default, but there would be an option on every (category) page named "View" that allows people (users and non-users alike) to change it to a chronical organisation.

For signed in users they can change the default viewing in their user settings, for people without a Wikimedia SUL account the default should remain alphabetical.
