5.6 (jessie) is EOL 12/31 and 7.0 (stretch) is EOL 12/3 (!): https://secure.php.net/supported-versions.php
Anyone know what version(s) will be moved to and when?

T172165 suggests that Debian will be providing security patches for 7.0 in stretch till June 2022. Does that sound right?
That's right, Debian will backport security patches for packages in the main repo for the duration of LTS, regardless of whether upstream support has ended.
Here's Debian's support timeline: https://wiki.debian.org/LTS
Jessie (w/php5) has extended/LTS support by the LTS team until 7/2020
Stretch (w/php7.0) is maintained by the Security team until 7/2022, after which the LTS team takes over for 2 more years.
I think we're ready to test Stretch/7.0 and hopefully upgrade promptly. I'll add a couple tasks to this one to track testing for specific server roles.
