Current Situation:
The new versioning scheme is decided. We are here applying this new scheme to the new releases.

Following T365713: Versioning scheme POC, we need to apply the new versioning scheme to our stable branches.

Branch naming:
T367023: Finalize branch and tag names for new versioning

Acceptance Criteria:

• decide on the numbering to use T366452: Decision: Initial versions for deployment kit and all the service images new releases
• branches are renamed with new versions
• verify and adapt, if necessary, that the GH rules track. i.e. when running our CI the correct versions of the packages are put together
  • adapt ci code
  • adapt branch protection rules
