Fonts not working in the PDF output, included but not applied in epubs

The fonts available are:

This results in a display like (note the æ-macron):

Changing to Linux Libertine, which should have that character doesn't result in different fonts in the output.

in fact, none of the font selections seem to have any effect. The EPUB export includes the font, but it doesn't seem to actually be applied.

This looks like a regression introduced in T273832 (by me).

It's a bit bad that we've not been including fonts correctly since May! :-(

I downloaded ebooks (1 in English, 1 in Hindi) with several different fonts selected in both EPUB and PDF formats.

I see that the fonts are included in the PDF/EPUB files (by looking at the properties in my PDF viewer or by extracting the EPUB).

With different fonts selected, the text displays differently when viewing the PDF/EPUB. This suggests that the fonts are being applied correctly.
