Missing memcached logs

Description

While checking for possible errors in changes for T83551 I discovered that memcached-serious.log on fluorine disappeared.

@hashar traced this to https://gerrit.wikimedia.org/r/#/c/174452/

given that logstash logging is disabled for now, where should I find these logs?

This is blocking for T83551 as I need to monitor memcached errors when moving servers/relabeling them.

I think this commit https://gerrit.wikimedia.org/r/#/c/187730/ when merged should solve this.
